Torched Honey Baked Ham

Directions

  1. Preheat grill to 275F (indirect heat). May alternatively use oven.
  2. Unwrap ham, remove and discard all packaging.
  3. Place ham in roasting pan face down, drizzle honey over entire exposed surface of ham, add ½ cup water to pan then cover and tent with aluminum foil.
  4. Cook ham 10 minutes per pound.
  5. Before removing ham from oven, mix sugar and all remaining spices together.  Add sugar mixture and ½ cup of juices from the bottom of ham roasting pan to sugar mixture.  Bring mixture to a boil for 1 minute then immediately spread on outer surface of ham.  If mixture is too thick, add water by 1 TBSP increments. The mixture will thin as the sugar dissolves but will get much thicker quickly after removing from the heat. Cautious, it will be HOT.  Spread with a spoon or knife, do not touch the sugar with your fingers.
  6. Use the Bernzomatic ST2200T Detail Torch or torch of choice in a sweeping motion over the molten sugar until it bubbles into a nice sugar crust.
  7. Serve warm, room temperature or cold if desired.
