Pork Tenderloin Cubano Sandwiches

Directions

  1. Blend shallots, olive oil, garlic and teaspoon of salt.
  2. Season tenderloins by rubbing with whole grain mustard, and adding blended oil over tenderloin, and thyme. For best results, season overnight.
  3. Cook Tenderloin at 375F covered, until tenderloin hits 160F in thermometer. Let rest for 10 minutes.
  4. Charr the outer part of loin using the Bernzomatic torch.
  5. Slice ¼ “ thickness to assemble sandwich. Slice pickles very thin and cut bread. Rub with butter and yellow mustard and lay down pickles, followed by pork and swiss cheese. Torch cheese with Bernzomatic.
  6. Press sandwich firmly to keep it compact.

Ingredients

  • 2 pork tenderloin (tenderloin makes 2 sandwiches; recipe makes 4 sandwiches)
  • 4 loaves of bread (Cuban style if possible)
  • ½ lb. Swiss cheese
  • 1 jar dill pickles
  • ½ cup whole grain mustard
  • 6 garlic cloves
  • Salt (kosher diamond crystal)
  • 2 shallots
  • 1 bunch thyme
  • 1 cup olive oil
  • Butter
  • Yellow mustard
